Battery settings used for all EV charging instances are set via the settings icon on the EV charging dialog.

Inputs in the dialog:
Initial charge: the starting charge percentage. It is typical practice for EV users to avoid discharging the battery below 10%.
Max potential charge: the final charge percentage. It is typical practice for EV users to avoid charging the battery beyond 80% for day-to-day usage. For long journeys this value maybe higher.
Charging curve: the characteristic charging curve for the EV battery. This curve describes how fast the battery can be charged (the charge factor) at the state of charge (%). The curve can be edited via the table or by dragging nodes on the chart. EV battery charging curves vary by vehicle; the default provided is typical / average.
